I was an AFS student and this is a recipe from my American Mom. She made it and sent it to me one Christmas in the 1990’s. It was packed in the bags of some friends who came to NZ every year. Grateful to them, and to her for including the recipe.
Combine:
- 1 cup flour
- 1/2 c white sugar
- 1/2 c brown sugar
- 1/3 c crunch peanut butter
- 1 egg
- 1/2 c butter
- 1 c oatmeal
- 1/2 tsp baking soda
- 1/4 tsp salt
Press into a greased pan.
Sprinkle over: 350 grams of chocolate chips or chunks or whatever. No need to be exact
Bake at 180C for 15 minutes and glaze whilst hot.
Make glaze by melting:
- 1 c icing sugar
- 1/2 c peanut butter
- 4 tbsp milk
This is easier to cut before it fully hardens. My advice is cut into very, very small squares as it’s delicious when you have a small amount but will make you sick if you eat too much. That’s why I only make this at Christmas.
